Ghanaian-Style Tomato Stew with Upper Foods Canned Tomatoes

Cook Time: 45–60 minutes
Serves: 4–6 people

Ingredients:

  • 1 can Upper Foods Whole Peeled Tomatoes (400g)
  • 1 large onion, sliced (reserve half for blending)
  • 2 cloves garlic, chopped
  • 1 thumb-sized piece of ginger, chopped
  • 1–2 hot peppers (scotch bonnet or kpakpo shito) (adjust to taste)
  • 1/4 cup vegetable oil or palm oil
  • 1 tbsp tomato paste (optional, for richer color)
  • 1 tsp curry powder
  • 1 tsp thyme
  • 1 seasoning cube (Maggi or preferred brand)
  • Salt to taste
  • Protein of choice: Fried fish, boiled eggs, beef, chicken, etc

Instructions:

Step 1: Prep the Tomato Base

  • Pour contents of Upper Foods canned tomatoes (including juice) into a blender.
  • Add half the onion, garlic, ginger, and hot pepper. Blend until smooth and set aside.

Step 2: Build the Stew

  • Heat vegetable oil in a saucepan on medium heat.
  • Add sliced onions and sauté until soft and slightly caramelized.
  • Add tomato paste and fry for 3–4 minutes.
  • Pour in the blended tomato mixture. Stir well and reduce the heat slightly.

Step 3: Season & Simmer

  • Add thyme, curry powder, seasoning cube, and salt.
  • Simmer uncovered for 25–30 minutes, stirring occasionally.

Step 4: Add Protein

  • Add your protein of choice. Simmer another 10 minutes to absorb flavor.

Serving Suggestions:

  • Steamed rice
  • Boiled yam or plantain
  • Kenkey or banku
  • Gari and beans

Chef’s Tip:

  • Add a splash of stock or a bay leaf while simmering.
  • Use two cans for larger portions or batch cooking.
