Classic Ghanaian Jollof Rice with Upper Foods Tomatoes

Ingredients:

  • 2 cups of long grain rice (washed)
  • 1 can of Upper Foods diced tomatoes (400g)
  • 1 medium onion (sliced)
  • 1 tbsp tomato paste (optional)
  • 1 tsp curry powder
  • 1 tsp thyme
  • 1 stock cube
  • Salt to taste
  • 2 tbsp vegetable oil
  • 1 cup of chicken/beef stock (or water)
  • Protein of choice (grilled chicken, beef or fish)

Instructions:

  1. Heat oil in a pan and sauté onions until translucent.
  2. Add Upper Foods canned tomatoes and tomato paste. Simmer for 10–12 minutes until the sauce thickens and oil separates.
  3. Add seasonings and stock. Stir well.
  4. Add washed rice and stir to coat. Cover and let simmer on low heat.
  5. Cook until rice is fluffy and moisture is absorbed (add water as needed).
  6. Serve with your preferred protein and salad. Enjoy!
